The tea plants are shade-grown for several weeks prior to harvest to increase chlorophyll and amino acids. Leaves are hand-plucked, lightly steamed to prevent oxidation, dried, and de-stemmed into tencha, then slowly stone-milled to preserve colour, aroma, and flavour.
